What is 00 Flour?

The number refers to the fineness of the milling, and a 00 flour has an extremely fine texture that makes a very soft and flavorful thin crust. It is made from top-quality, all-natural soft wheat flour that has been milled slowly for ideal water absorption and yield. At Giolitti Deli, we use and sell 00 flour by the brand Caputo, known as the flour of Naples. Their flour is high in protein and gluten, which makes a consistent, long rise dough. If you purchase a bag from Giolitti’s to take home, simply mix it with Neapolitan yeast, water, and salt, then knead it by hand or with a mixer on low speed. This will create the perfect dough for your home-made Neapolitan pizza!

What Makes A Neapolitan Pizza

Neapolitan pizza has a few very specific characteristics, including that it is only made with simple, fresh ingredients. This refers to basic dough, as well as the mozzarella cheese, tomatoes, basil, and extra-virgin olive oil.
