Spaghetti Cacio e Pepe
Spaghetti Cacio e Pepe (cheese and pepper) is a classic Roman dish that couldn’t be easier to make. In fact, all you need is pasta, pepper, olive oil, cheese, boiling water, and about 15 minutes to make this vegetarian meal. Simply cook ½ lb of spaghetti to al dente and reserve one cup of the pasta water, then toss with three tablespoons of Extra Virgin olive oil, one or two tablespoons of freshly ground black pepper, and ½ cup of freshly grated Pecorino Romano cheese. Add the remaining pasta water to make the sauce nice and creamy, and you’ll have a delicious dinner in no time!
