What Is Gorgonzola Cheese?
Gorgonzola is an Italian town in north-east Milan, home of the famous gorgonzola cheese! The blue mold cheese is soft and creamy when it is young, while mature versions are stronger and have a more pungent bite. In the regions of Lombardy and Piedmont, cows feed on natural forage in pastures to deliver unrestricted, full-bodied milk to creameries. The unique flavors of Gorgonzola are attributed to these regions and their cows, as the cheese is exclusively made from cow’s milk. While it is often compared to blue cheese, it has a milder flavor than most other blue cheeses and is set apart due to its roots in Italian artisanship.
How It Is Made
As mentioned above, Italian Gorgonzola is made from cow’s milk, so a crucial step in making the cheese is to confirm the quality of the milk. Pastures will send fresh milk daily to local creameries, and they will monitor it to ensure it maintains its flavors after pasteurization. Then, a mixture of yeasts and rennet is added to the pasteurized milk, then it is transferred to large tanks to coagulate the milk and start the marbling effect. Next, the milk curdles to a firm paste, and the curd is cut and separated, which allows the whey to be released. The cheese is then put in molds and brined with sea salt and placed to age, and during this process, the rind is pierced with steel needles to create a marbling effect. After a minimum of 50 days of maturing, the cheese can be labeled as Gorgonzola!
Gorgonzola Dolce
You can find Gorgonzola Dolce at Giolitti Deli- a type of “sweeter” gorgonzola. It is milder and much softer than the original cheese and is made by using pasteurized cow’s milk and is aged for three months. Gorgonzola Dolce is very creamy and has an almost spreadable texture.
