This week we at Giolitti Deli would like to introduce you to our new favorite cheese, the English Stilton. We may be an Italian restaurant, but that doesn’t mean we don’t love our neighbor’s cheeses! Read on to discover the history of this semi-soft blue cheese and the varieties of flavors you can find at Giolitti Deli.
The Origins of Stilton
Made in the English Midlands, Stilton is named after a village. However, this is not where the cheese was initially crafted in the 18th century, only where it was sold. Melton Mowbray was the name of the village it was created in, but that doesn’t have quite the same ring to it. The cheese gained popularity as travelers from London to Scotland made Stilton their first stop on their long coach rides north.
The Stilton cheese is mostly made the same way it was centuries ago. The cheese has such a unique texture and flavor that it is the only British cheese given its own certification trademark. The “true” English Stilton today comes from authorized creameries in three British counties: Leicestershire, Nottinghamshire, and Derbyshire.
How Does It Taste
Stilton has a mellow but rich flavor, and a pungent aftertaste. The best Stilton is creamy, with a subtle sweetness and a salty or nutty finish. The best way to judge the quality of your Stilton is by its creaminess, rather than how blue it is.
You can crumble Stilton over a salad, or serve as a dessert cheese with Port Wine.
Let the cheese come down to room temperature before enjoying it, and you will have a delicious Stilton experience.
Enjoy Stilton at Giolitti Deli

We serve a White Stilton blended with the tangy taste of cranberries, which gives it a rich and fruity flavor. This tart and crumbly cheese pairs well with an equally tangy wine, such as a Riesling.
If you’re looking for a more savory White Stilton, we serve one blended with mango and ginger. The combinations of the mild mango, sharp ginger, and creamy Stilton crafts a powerful tasting experience.
