The Pressing Method
There are various methods for making olive oil- the “pressed” method means that during the extraction process of the oil from olives, no heat or chemical additives were used. This is because heat or chemicals can ruin the flavor and smell. Extra virgin olive oil is what comes out of the first pressing, and is actually one of the few truly healthy oils. The pressing method allows the oil to retain its full nutritional value, and the oil is a mono-unsaturated fat with high amounts of anti-oxidants and a low content of cholesterol.

Extra virgin olive oil is made by crushing olives and extracting the juice, but there are many more factors that go into creating the perfect flavor.
