What Does It Mean To Be Gluten-free?
Many people are going on gluten-free diets, whether because they have a gluten sensitivity or if they just want to try the popular diet. Those with celiac disease or gluten sensitivity benefits from a gluten-free diet, and it can significantly improve their quality of life. Those without gluten sensitivity can also benefit, as they may find that staying away from gluten allows them to eat healthier and feel better. Foods that include wheat, barley, and rye are not allowed on the diet, so alternative ingredients must be used to produce gluten-free pasta.
Corn Pasta
Corn is gluten-free, so it is a good substitute for those avoiding whole wheat flour. The pasta is made with a mixture of corn flour, coarse cornmeal, and water to create the dough. The result is a light yet delicious texture and taste.
Rice Pasta
A combination of fine white or brown rice flour and rice bran is often used to make rice pasta. Rice bran is a leftover from the milling process, and in addition to being gluten-free, it contains antioxidants and fiber.
Quinoa Pasta
Quinoa is another good source of fiber, as well as protein. It is a seed that cooks like a grain but can be ground into flour. Quinoa pasta is often combined with corn flour to make another great gluten-free pasta option!
Italian Egg Pasta
Italy is also producing gluten-free pasta to cater to those with gluten sensitivity or on a gluten-free diet. The pasta is made with cornstarch, tapioca flour, potato flour, olive oil, and eggs to create a delicious authentic Italian meal. Some recipes also include xanthan gum, which is a thickening food additive derived from corn sugar to provide more structure to the pasta.
